by Dolphin was created with the desire to craft unique and extraordinary gastronomic experiences. We want to challenge the status quo and drive the restaurant business of today and the future.

At the forefront of by Dolphin is Niklas Ormstrup, surrounded by a strong, young, and dynamic team. Niklas is one of Denmark’s greatest culinary talents, locally rooted and with a confident hand when it comes to taste, innovation, and design. Most recently, he was head chef at Nørre Vosborg.

Behind by Dolphin is the Dolphin family, who run Hotel Herning and Dolphin Hotel Herning, as well as the travel agencies Ans Rejser and Dolphin Travel. The Dolphin family business is managed by Julie, Tinna, and Jan Ørum Vermø.
